Mastic / Masticha

Mastic is from the Gum Mastic Tree, only grown in the Greek Island, Chios. It is produced from the resinous sap that is collected from trees and is world famous for its unusual taste.

These translucent droplets are charmingly referred to as ‘tears’ or ‘diamonds’. We like to use the mastic for giving consistency to ice cream; it can also be chewed as a chewing gum or used to add special flavours to sweets.

How to use the mastic / masticha: Crush the mastic and cook it in milk or hot water, mix time to time until its absorbed and add to your dessert.

Masticha Ice Cream (BOZA)

INGREDIENTS

  • Required tools: Ice cream machine
  • 800gr sugar
  • 8 eggs
  • 1 litre cream
  • 1 litre milk
  • 1/2 cup rose syrup
  • 1/2 cup rose water
  • 3 table spoon caster sugar
  • 1/3 little bag masticha

METHOD

In a pot heat the milk until nearly boiled and leave on low heat. In the ice cream machine, mix sugar and eggs on high speed for 2 minutes. Reduce the speed and add cream. Mix for 1 minute

Thoroughly crush the masticha with the caster sugar until combined and add to the pot with the hot milk and mix well.

Leave the milk to cool a bit and add it to the mix. Put in fridge to cool. Once cooked add to the ice cream machine, follow the ice cream machine instructions, store in a container and keep in the freezer.

Alternative without ice cream machine:

Divide the mix to 3 containers and put in freezer and mix it by hand every 1 hour until set
